Tarka Dal
This is a cheap, delicious and healthy meal. Lentils help to reduce blood cholesterol since they contain high levels of soluble fibre. The latter can aid digestion and prevent constipation. The fiber in lentils also helps to slow down digestion and stabilize blood sugar. This also increases the steady, slow-burning energy due to its fibre and complex carbohydrates. They are also an excellent source of plant-based protein. Serve with rice or steamed vegetables.
Instructions
  1. Place lentils into 2 pints of water, bring to the boil and then simmer covered for 40 minutes or until the lentils are cooked.
  2. When lentils have cooked through, remove from heat and set aside.
  3. Meanwhile heat the oil in a pan and add cumin seeds, onions, chilli and ginger and fry for 5 minutes
  4. Blend the garlic and tomatoes in a food processor and then add to the onion and chilli mix
  5. Add spices to the pan and 100 ml of vegetable stock. Stir well
  6. Add seasoning and then bring to the boil. Turn down the heat and allow to simmer for 20 mins.
  7. Add the cooked lentils to the sauce and stir well. Add more water if too thick. Bring to the boil and adjust seasoning. Sinner for 5-10 mins
  8. Stir in chopped coriander and then serve.
