
This is a smooth and creamy strawberry cashew yoghurt. Served here with Strawberry chia jam at the bottom of the glass followed by the strawberry yoghurt which is then topped with some natural coconut yoghurt followed by a handful of fresh strawberries and a few pumpkin seeds – finally then drizzled with maple syrup – it makes a delicious, filling and healthy dessert.
Alternatively you can just serve this strawberry yoghurt with some fresh strawberries.

Ingredients
- 225 g Cashew nuts – soaked for at least 1 hour
- 200 ml Coconut milk
- 1/2 lemon squeezed
- 1 tsp vanilla essence
- 2 tbsp maple syrup
- 10 strawberries plus more for serving

- Add all the ingredients into a blender. Blend until smooth and then serve.
