Ingredients
- 2 tabsp Extra virgin olive oil
- 1 large onion
- 2 Red peppers, chopped
- 2 cloves garlic
- 6 medium tomatoes
- 6 eggs
- 125 ml passata
- 5 grams flat leaf parsley To garnish
- 1 tsp Ground coriander
- 1 tsp paprika
- half tsp Ground cumin
- Sea salt and black pepper for seasoning

Instructions
- Heat the oil in a large frying pan
- Add the onions,garlic, red peppers, spices, and seasoning. Cook until soft.
- Add the tomatoes, and passata. Simmer until the mixture begins to reduce – about 10-15 mins.
- Make 6 indentations/wells in the tomatoe and pepper mixture and then gently crack an egg into each well.
- Continue cooking until eggs are set.
- Add Fresh parsley and adjust seasoning. Serve
