Butterbean Leek Mash
Ingredients
- Butterbeans x 2 tins
- Large Leek x 1
- Garlic cloves x 3
- Onion x 1
- Olive Oil
- Vegan Milk 1 tbsp
- Sea Salt and Black Pepper to season
Instructions
- Finely chop the leek, onion and garlic and place into frying pan with olive oil – lightly fry
- Place butterbeans into food processor and add fried ingredients
- Add milk
- Blend until a smooth mash
- Add sea salt and black pepper before serving
