Instructions
- Heat oil in a pan and add onions, leeks, celery and potato. Cover and sweat for 10-15 mins.
- Pour in the stock and the rest of the ingredients. Bring to the boil and cook for 20 minutes or until all the vegetables are cooked.
- Place soup into a blender. Blend until smooth and then serve,
