- 2 pint Water
- 1 tbsp Miso paste
- 4 Spring onions
- 2 tbsp Wakami seaweed, shredded
- 4 Shitake mushrooms
- Dash Tamari
- 1/2 block firm tofu cut into cubes

Instructions
- Place water into a saucepan and add seaweed – allow to simmer for 5-6 minutes
- Add the rest of the ingredients, stir until the miso has dissolved,. Leave to simmer for 10 minutes, don’t boil it as this will reduce it’s heath benefits
- Serve the soup
