Ingredients
- 250 grams Cashew nuts
- 70 grams coconut butter
- 2 limes Grate the peel of both limes and then squeeze the juice of both limes
- 2 tsp vanilla essence
- 10 drops liquid stevia
- 8 oz Coconut milk or more if needed
- Handful coconut flakes To garnish

Instructions
- In a bowl place cashews and cover with hot water and soak for 15-20 minutes. Then drain the cashew nuts.
- Add cashews and all other ingredients to the blender. Blend until mixture becomes creamy. If too thick, add more coconut milk.
- Pour into serving bowls and place in fridge for 1 hour to set. Garnish with some coconut flakes and freshly grated lime peel before serving.
