Ingredients
- 200 grams Red Lentils
- 1 medium Sweet potato chopped
- 1 medium Red onion, chopped
- 1 tomato chopped
- 2 carrots chopped
- 2-3 Crushed garlic clove
- 1 tbsp tomato puree
- 1 tbsp Cumin Powder
- 1 litre Vegetable stock
- Handful coriander to garnish
- Sea salt and black pepper for seasoning

Instructions
- Add all ingredients to a large pot and cover with the vegetable stock
- Bring to the boil and season. Reduce heat and simmer for 25-30 minutes until vegetables are cooked.
- Remove from heat and blend until smooth. Garnish with coriander and serve
