Cashew Nut Dressing
- 70 g cashew nuts, soaked in water for 20 mnis then drained.
- 1 garlic clove
- 1/2 tsp onion salt
- 1/2 tsp Dijon mustard
- 1 tsp Xylitol
- 1 tbsp tamari sauce
- 2 tbsp nutritional yeast flakes
- 1 tbsp apple cider vinegar
- 2 tbsp lemon juice
- 3 tbsp Water
- Sea salt and black pepper for seasoning

- Place all ingredients in an high speed blender. Blend until smooth – add more water if necessary to make a thick and creamy dressing

- Place kale in a large bowl and add dressing. Massage the kale with your hands until it wilts and softens.
- Add other ingredients and gently toss. Serve
