- 6 Medium Eggs
- 5 tbsp Margarine
- 100 grams Xylitol
- 65 grams Coconut flour
- 2 tsp Nutmeg
- 1 1/2 tsp Baking powder
- 300 grams Mixed fruit – raisins, cherries, saltanas

Instructions
- In a food processor add all the ingredients apart from the mixed fruit
- Blend the ingredients and once smooth add the mixed fruit
- Mix the fruit through ensuring it’s evenly distributed
- Grease a cake tin with margarine and add the mixture
- Cut a little piece of greaseproof paper out to cover the top of the cake to prevent it from burning
- Put the tin into the oven and bake for 40 minutes or until firm to the touch
- Allow to cool before serving
