This is a creamy rice pudding with delicious and warm caramelised pineapple topped with pistachio nuts.
Pineapple has a number of health benefits including aiding digestion. It is also full of fibre, phytonutrients and has good levels of vitamin C.
In a saucepan add the milk, cardomon pods, xylitol and rice. Bring to the boil and simmer until rice is soft and creamy. Remove from heat and remove the shells of the cardamoms.
In the meantime take a frying pan and heat the coconut oil, add the maple syrup, cinnamon and cook until the pineapple starts to cook and caramelise.
Serve the rice into bowls and spoon the pineapple on top. Sprinkle over the nuts and serve
