
This is a tripled layered delicious and healthy dessert. The first layer is fresh raspberries and raspberry chia, followed by natural coconut yoghurt and finishing with chocolate mouse topped with grated chocolate – it’s awesome!
This is a vegan dessert bursting with antioxidants.

Ingredients
- 1 punnet fresh raspberrys
- 1 large Carton Natural Coconut yoghurt
- 2 tbsp chia seeds
- 1 pint Coconut milk
- 2 tbsp maplesyrup or xylitol
- 300 g silkened tofu
- 120 g vegan chocolate
- 1 tbsp Coconut Oil

Chocolate mousse
- Melt coconut oil and 100 g of the vegan chocolate. Meanwhile, place silken tofu in food processor.
- Add melted chocolate and coconut oil into the food processor with the tofu, and 1 tbsp. of xylitol or maple syrup and blend until smooth.
- Grate the remaining chocolate. divide chocolate mousse into 4 glass dessert glasses/bowls and place a layer of grated chocolate on top of the mousse.
- Then divide coconut yoghurt between the 4 dessert bowls/glasses.
Raspberry chia
- Place coconut milk in blender, with half of the raspberrys and1 tbsp of xylitol or maple syrup and blend until smooth. Pour raspberry milk into a bowl and stir in chia. Set aside for 20 mins.
- Divide chia into the 4 dessert bowls/glasses and garnish with the fresh raspberrys. Serve.
