Cashew and Cacao Truffles
These are delicious treats – quick and easy to make – with good levels of protein, good fats and no refined sugar which means that they are great for maintaining energy levels.

maple syrup or honey

vanilla essence

Instructions
Soak the cashews and dates in boiling water for 10 mins. Then drain and place them in the food processor and blend until smooth
Add the coconut oil, maple syrup, and vanilla and blend. then add the cacao and blend until smooth.
Tip the mixture into a bowl and place in the fridge for 20 mins to cool.
Remove from the fridge and roll into balls – then roll through the cacao powder. Leave in the fridge until ready to eat.
