Ingredients
- 150 g Cashew nuts
- 150 g Soft and pitted dates
- 1 tbsp Coconut Oil
- 2 tbsp maple syrup or honey
- 1 tsp vanilla essence
- 70 g cacao powder extra for dusting

Instructions
- Soak the cashews and dates in boiling water for 10 mins. Then drain and place them in the food processor and blend until smooth
- Add the coconut oil, maple syrup, and vanilla and blend. then add the cacao and blend until smooth.
- Tip the mixture into a bowl and place in the fridge for 20 mins to cool.
- Remove from the fridge and roll into balls - then roll through the cacao powder. Leave in the fridge until ready to eat.
