The combination of broccoli and beans works well in this soup. The beans and potato also give the soup a creamy texture. Broccoli is a really nutritious vegetable, full of vitamin C, iron, folate and cancer-fighting phytochemicals. It also assists the body to detox. The beans also provide good levels of protein and fibre.
Place all the soup ingredients in a large saucepan and cover with vegetable stock. Bring to the boil and leave to simmer for 25-30 mins or until all the vegetables are soft.
Remove from the heat and place in food processor or blender. Blend until smooth and then serve.
