Ingredients
- 400 Grams Black lentils
- 1 Tablespoon Coconut Oil
- 1 Large onion
- 4 Cloves Clove garlic, crushed
- 1-2 Tablespoons Fresh grated ginger
- 1-2 Chillies
- 1 Tablespoon Curry powder
- 1 Teaspoon Garam Masala
- 400 Gram Tin of chopped tomatoes
- 1 Tablespoon Fresh lemon juice
- 2 Tablespoons Fresh coriander

Instructions
- Cook the black lentils by following instructions on pack
- In a large frying pan, heat oil and add chopped onions, and seasoning. Cook for 7-10 mins or until soft and golden brown
- Add garlic, ginger, and chillies to the frying pan and cook for a further1-2 minutes
- Add curry powder and garam masala to frying pan and stir for 30 seconds
- Add cooked and strained lentils to the frying pan together with the tomatoes
- Simmer and cook for a further 5-10 minutes or until desired consistency
- Squeeze over fresh lemon and garnish with the fresh coriander
- Serve with brown rice and/or freshly steamed vegetables of your choice
