- Put the aubergines, onions and green pepper in a large pan over a medium heat and add the oil, the spices, salt and xylitol. Add more oil if necessary.
- Cook covered for 20-25 minutes, stirring frequently or until the vegetables are soft. Drain off any excess oil before serving.
