Chocolate, Coconut and Raspberry Dessert
This is a tripled layered delicious and healthy dessert. The first layer is fresh raspberries and raspberry chia, followed by natural coconut yoghurt and finishing with chocolate mouse topped with grated chocolate - it’s awesome! This is a vegan dessert bursting with antioxidants.

Chocolate mousse
  1. Melt coconut oil and 100 g of the vegan chocolate. Meanwhile, place silken tofu in food processor.
  2. Add melted chocolate and coconut oil into the food processor with the tofu, and 1 tbsp. of xylitol or maple syrup and blend until smooth.
  3. Grate the remaining chocolate. divide chocolate mousse into 4 glass dessert glasses/bowls and place a layer of grated chocolate on top of the mousse.
  4. Then divide coconut yoghurt between the 4 dessert bowls/glasses.
Raspberry chia
  1. Place coconut milk in blender, with half of the raspberrys and1 tbsp of xylitol or maple syrup and blend until smooth. Pour raspberry milk into a bowl and stir in chia. Set aside for 20 mins.
  2. Divide chia into the 4 dessert bowls/glasses and garnish with the fresh raspberrys. Serve.

  1. Place coconut oil, maple syrup. vanilla essence and cinnamon in a saucepan and heat through.
  2. Add banana and continue cooking ensuring that the banana is covered with the syrup. Cook until the banana is soft. Turn off heat.
  3. Place yoghurt into bowls and pour in the caramalised banana. Top with the grated chocolate and serve.

  1. Pour milk into a saucepan and bring to the boil
  2. In the meantime in a bowl mix together the cornflour, maple syrup and cocoa. Add some milk and mix into a thick paste.
  3. Just before the milk boils, pour the custard mix into the milk and stir constantly until it thickens. Turn off heat.
  4. Pour the chocolate custard into the bowls, put sliced bananas into each and sprinkle over the grated chocolate. Serve.

  1. Melt vegan chocolate and coconut oil
  2. Place tofu and xylitol in food processor and then pour in melted chocolate and blend until smooth.
  3. Spoon chocolate mousse into each of the glass dishes. Place in fridge and allow to cool for 30 mins.
Coconut layer
  1. Mix the yoghurt and maple syrup/honey together and then spoon on top of the cholate mousse.
Raspberry Compote
  1. Tip fruit into saucepan and add all other ingredients.
  2. Bring to the boil and simmer for 3-5 mins, Allow to cool.
  3. When cool, spoon on top of the coconut layer. Then sprinkle over almond slices to garnish. Serve
