Beetroot Soup
Beets are INCREDIBLY nutritious...packed full of essential nutrients and vitamins such as potassium, magnesium, fiber, vitamins A, B & C and many more! Beetroot serves as a natural blood cleaner. It’s able to help the body detox and cleanse the blood of heavy metals, toxins and waste due to its compounds called glutathiones, which are essential for detoxification within the liver and other digestive organs. Additionally, the fiber content in beetroot helps to sweep the digestive tract of waste and toxins while restoring healthy and regular bowel movements
Instructions
  1. Place beetroot in water and bring to the boil. Cook until tender. Then peel under running cold water and chop up roughly.
  2. Meanwhile chop the onions , fennel and celery. Heat the oil in a large pan and place these veg in to cook. Cook until the onions are soft and then add the garlic.
  3. Then chop the potato and add it to the onions, together with the beetroot and fennel. Add the stock and bring it to the boil. Simmer for 30 minutes until the potato is soft.
  4. Add the balsamic vinegar and cayenne pepper. Season and stir.
  5. Blend the soup to a smooth puree and return to the heat.
  6. Chop the kale into short thin slices and fry them in olive oil for a few minutes until the kale is tender but not quite soft.
  7. Pour the soup into bowls and place a little kale sitting in the centre on top of each.

This is a delicious alternative to the traditional scrambled eggs on toast. The sweet potato is used as an alternative to toast and the tofu and veg is an alternative to eggs. This is a low carb, nutrient dense, vegan dish which is full of flavour and packed with phytonutrients.

  1. Place sweet potato in the ovenproof dish and brush liberally with olive oil and half of the smoked paprika - place in oven on 180C for 10-15 mins or until soft.
  2. Meanwhile in a frying pan melt coconut oil and lightly fry onion for 5 mins before adding the mushrooms, garlic and red pepper. Cook until the vegetables are soft.
  3. Crumble over the tofu and stir in the spices, nutritional yeast, and tamari. Season.
  4. Cook for a further 3 mins and then add the spinach leaves and stir until the spinach has wilted.
  5. Spoon onto 2 plates and add the sweet potato, chopped avocado and tomato.

Salmon and Sweet Potato Fish Pie
This fish pie is made with salmon because it's an oily fish high in Omega 3. It is topped with sweet potato and a bread, parsley and vegan cheese gratin

  1. Place salmon steaks, frozen peas and prawns in bottom of large baking dish.
  2. Place sliced leeks in frying pan with olive oil and cook until soft - about 10-12 mins. When cooked, spread over fish and prawns and then season.

  1. Place milk in a saucepan with bay leaf, parsley and Dijon mustard and bring to the boil. Then leave to simmer.
  2. Mix the cornflour with a little of the milk and mix into a smooth paste. Then mix the paste slowly into simmering milk and continue to stir until it thickens. Season. Remove bay leaf
  3. Peel the potatoes and boil until soft. Mash the cooked potatoes with a little milk and then season.
  4. Mix the breadcrumbs, grated cheese and chopped parsley together.
  5. To construct the pie, pour sauce over the fish in the large ovenproof dish. Then spread over the mashed potato evenly. Finally, pour over breadcrumb mix evenly.
  6. Place pie in oven on 180c for 30-35 mins. Serve with some steamed vegetables like broccoli or green beans

  1. Add all ingredients to a large pot and cover with the vegetable stock

  2. Bring to the boil and season. Reduce heat and simmer for 25-30 minutes until vegetables are cooked.

  3. Remove from heat and blend until smooth. Garnish with coriander and serve
