Instructions
  1. Heat the oven to 180C. Cut the tofu into long rectangles. Place the pieces of tofu in a bowl and sift over the cornflour and then season. Shake the pieces so that they get evenly coated.
  2. Oil an oven proof dish and then add the slices of tofu. Pour the olive oil evenly over the tofu and then sprinkle over the sesame seeds. Place in the oven for 30-40 minutes - turn half way through.
  3. Mix the sauce, adding all the ingredients together
  4. Remove the tofu from the oven and pour over half of the sauce and leave to stand.
  5. Heat the sesame oil in a wok and add the vegetables and stir fry for 3-5 minutes. Add the cooked noodles - then add the sauce and thoroughly stir. Season to taste with extra tamari if required.
  6. Finally add the crispy tofu pieces and cook until heated through.
  7. To serve, sprinkle with chilli flakes, sesame seeds, chopped spring onions and chopped coriander.

Leek and Pea Flatbread
This is a savoury gram flour pancake or flatbread that contains chopped leeks and peas. It can be eaten with soups or salad but is equally delicious on its own. It is gluten free and has both protein and fibre which means that this pancake/flatbread will keep you fuller for longer.

  1. In a food processor add the gram flour, baking powder, spices, salt, pepper and water. Process into a thick batter.
  2. Then stir in the chopped coriander and spring onions.
  3. Heat some of the oil in a small frying pan/skillet and add a small handful of leeks and peas and fry for a few minutes.
  4. Then pour some of the batter mixture over the leeks and peas. Cook for 4/5 minutes and then turn it over and cook the other side for a few minutes or until golden underneath.
  5. Set aside pancake/flatbread and then repeat above process with the leeks, peas and batter. Serve immediately.

Tofu Satay with Pineapple Salsa
The satay sauce and pineapple salsa really compliment each other in this dish - its delicious! Served here with some brown rice.

  1. Slice the tofu into 8 equal sized slices. In a bowl , mix the ground spices, garlic, tamari and oil together. Add the tofu and allow to marinate for 30 minutes. Then place the tofu on a greased baking sheet and bake for 20 minutes, turning once halfway through.
Satay Sauce
  1. Heat oil in a large pan and add the onions, garlic, chilli and ginger. Fry for about 5 mins. Then add the ground spices and cook for a further minute.
  2. Then add the coconut milk, tamari, xylitol, lemongrass, and simmer for 20 minutes until reduced by half. Stir in the peanut butter and continue to simmer for another 10 minutes.
  3. Remove the lemongrass from the sauce and place in a blender. Blend until smooth.
Salsa
  1. In a bowl mix all the salsa ingredients together.
  2. Serve the baked tofu on some brown rice, with the satay sauce and pineapple salsa.

Vegetable Fritters
These veggie fritters are great to have for either breakfast or lunch. They are light and tasty and go well with some roasted vegetables or with a salsa dip. The chickpeas and gram flour provide both good levels of protein and fibre.
Instructions
  1. Place chickpeas in a bowl and mash roughly. Add remaining ingredients and combine well together.
  2. Heat coconut oil in a frying pan. Drop 2-3 spoonfuls into the pan, press down lightly to form the round fritters. cook for 3-4 minutes on each side until lightly browned. Serve

Warm Asian Vegetable Salad
This is a quick and easy salad, great for winter and full of flavour. No need for cutlery with this dish - just pick up the lettuce leaves and enjoy.
Instructions
  1. Mix together the sauce ingredients and set aside.
  2. In a bowl mix the tamari and cornflour to make a smooth paste -if too thick add some water. Add mushrooms, spring onions, red pepper and garlic to the bowl and stir so that all the veg is covered with the paste.
  3. In a wok or frying pan heat the olive oil. Add the vegetables and stir fry for 10-12 mins until golden brown. Set aside.
  4. Fill the lettuce leaves with the veg mixture and drizzle over the sauce. Sprinkle over some sliced red onion and coraiander. Serve.
