Chocolate Fruit and Nut Bars
This is a tasty, delicious and filling snack - made with mixed nuts, seeds, raisins, cranberries, cacao, maple syrup and coconut oil. Simple to make, no cooking - just leave them to set in the fridge. These healthy snacks will keep you full for longer and balance your blood sugars. All nuts and seeds and their respective nut butters or pastes are considered to be therapeutic for detoxification as they provide anti-inflammatory oils, quality protein, fibre and phytonutrient compounds like lignans which support detoxification.

  1. Melt the coconut oil in a large saucepan. Turn off the heat. Then add all the other ingredients and stir well until thoroughly mixed.
  2. Line with grease proof paper a shallow dish.
  3. Pour the nut and seed mixture onto the dish and spread out evenly.
  4. Place in the fridge for at least an hour. Remove - cut into squares and serve,

  1. In a food processor combine the nuts and cocoa powder and process until it resembles fine breadcrumbs. Add the dates and coconut oil and process until the mixture begins to bind together.
  2. Pour the mixture into an 8 inch spring form cake tin and press down until flat. Place in the fridge to set.
Filling
  1. Place all the ingredients into a high speed blender and blend until smooth - add extra coconut milk as necessary.
  2. Pour onto the base. Place in fridge for 3 hours to set.
  3. When set, remove from tin and decorate with some grated vegan chocolate and berries.

A wholesome dessert made with oats, mixed nuts, cinnamon, honey, coconut oil, apples and berries. Serve with natural coconut yoghurt.

  1. Place chopped apples in a saucepan and cover with water. Bring to the boil and simmer for 20 minutes until apples are soft,
  2. Drain the apples and place in an ovenproof dish. Add the berries and xylitol - stir. Set aside.
  3. In a saucepan gently heat the coconut oil until melted. Turn off the heat. Add the honey and stir.
  4. Add the nuts, oats, and cinnamon to the oil and honey and stir thoroughly until well combined.
  5. Pour the nut and oat mixture over the apple and berries and spread evenly until all of the fruit is covered.
  6. Place in oven on 180C and cook for 25-30 mins. Serve with coconut cream.

Nut and Lentil Roast

Nut and Lentil Roast
This is a classic vegetarian loaf with lentils, nuts, chestnut mushrooms, and vegan cheese to go with all the classic roast dinner trimmings and makes for a delicious Christmas dinner alternative. Serve with your favourite sauce such as spicy tomato, mushroom or roasted red pepper. This roast is perfect for Christmas but can be eaten any time of the year and is also delicious with salad as well as cooked vegetables.

  1. Heat oven to 180C, Line with greaseproof/parchment paper a 1.5-litre loaf tin.
  2. Heat 2 tbsp oil in large frying pan and cook onion and celery for 5 mins until they begin to soften.
  3. Stir in crushed garlic and mushrooms and cook for further 10 mins
  4. Stir in diced red pepper, grated carrot and cook for about 5 mins
  5. Add 1 tsp of oregano and 1 tsp of smoked paprika, Cook for 1 min
  6. Add lentils, tomato puree and vegetable stock and immer for 25-30 mins. Mixture should be almonst dry - then set asise to cool
  7. Stir in breadcrumbs, nuts, eggs, cheese, parsley and season well.
  8. Spoon mixture into prepared tin and press down
  9. Cover with foil and bake for 30 mins. Remove foil and bake for further 30 mins or until firm when pressed gently.
  10. Remove from oven and allow to stand for 10-15 minutes before cutting and serving.

  2. Melt coconut oil in pan and add nuts and stir until they are all covered in oil
  3. Add spices and syrup and stir
  4. Transfer to a baking tray and roast for 10-15 mins. Cool and then serve
