Tempeh Salad Buddha Bowl
This salad is full of protein and fibre - Tempeh is a great source of plant based protein as are the mixed beans. It also has good fats with the avocado dressing and olive oil. finally there are plenty of phytonutrients with all of the salad ingredients including spinach, coriander, tomatoes, red onion and corn.

Instructions
  1. In a medium frying pan add the oil and cook the tempeh for 6-8 minutes until golden brown.
  2. Then add the tamari, garlic powder, cumin, and chilli powder and cook for another 5 minutes. Remove from the heat.
  3. For the dressing add all the ingredients to a blender and blend until smooth.
  4. Arrange the spinach, tomatoes, beans, corn, coriander and tempeh in a large bowl and serve with the avocado dressing.

Bean and Lentil Stew with dumplings (gluten free)
This is a easy to make vegan stew which is really great to make on a cold winters day. It’s full of flavour and really filling. The stew has good levels of protein with both beans and lentil - you can replace the mixed beans with any beans of your choice. Similarly, you can use different vegetables and ones that you may prefer.

  1. Peel and cut up the vegetables and place in a large saucepan. Add the beans and lentils
  2. Add passata, tamari and vegetable stock to the saucepan. Season
  3. Bring the stew to the boil and then cover and simmer for 60 mins
Dumplings
  1. Place flour and margarine in a bowl
  2. Rub the flour and margarine together to make fine breadcrumbs. Season. Add water to make into a smooth dough
  3. Divide dough into 24 pieces, and roll into small balls. 30 minutes before the stew is cooked - gently drop the dumplings into the stew. Cover the stew and dumplings and simmer.
  4. Serve and garnish with parsley.
