This is a delicious vegan, gluten free loaf topped with cashew cream and fresh berries.

Loaf
  1. Preheat the oven to 180C and line and grease a loaf tin.
  2. Sift the flour, baking powder, and cinnamon into a bowl and add the xylitol.
  3. Add the oil, milk and vanilla essence and mix until thoroughly combined. Toss in the berries and apple.
  4. Pour into the loaf tin and bake for approx 40 minutes or until golden brown and a skewer comes out clean.
  5. Allow to full cool while you prepare the topping.
Cashew cream/frosting
  1. Drain the cashews and then put all of the ingredients into a high speed blender. Blend until smooth - add extra milk depending on preference of consistency.
  2. Place in freezer/fridge for 30 minutes to allow to set
  3. Pour the cashew cream over the loaf and top with fresh berries. Store in fridge until ready to serve.

Panna Cotta
  1. In a pan, place the coconut milk, maple syrup and agar and stir well until mixed.
  2. Place the pan on the heat and gently bring to the boil stirring frequently. Then simmer for 3 minutes.
  3. Remove from the heat and pour mixture into 4 ramekins. Allow to cool and place in the fridge for at least 2-3 hours to allow to set.
Compote
  1. Place all ingredients in a pan and gently heat to a simmer. Cover the pan and cook strawberries for 3-5 minutes until syrupy. cool and set aside.
  2. Turn the panna cotta out onto plates and serve with the strawberry compote.

Chia Porridge with Apple Sauce and Raisins
On a cold winters morning, there is nothing that can quite beat a hot and steaming bowl of porridge. This porridge has a slight twist because it also has flaxseed, raisins, flaked almonds, apples and chia so this is a filling breakfast full of fibre, good fats, protein and antioxidants. so it will keep you full for longer and help to balance your blood sugar levels. The apple sauce is also very beneficial to your digestive system helping to reduce inflammation and support your immune system. The apple sauce is really simple to make - just stew some apples and then put them into a food processor, blend and you have apple sauce. Make the sauce the night before and then store it in the fridge and then warm it up while you are making the porridge. The therapeutic benefits of stewed apples has been well researched. They can heal, repair and maintain the mucosal lining of the gut. It is the flavonoids in the stewed apples that reduces inflammation and protects intestinal tissue from damage. Also the ratio of different micro-organisms in the gut changes with regular cooked apple consumption to favour mucosal immune tolerance and weight loss. Finally, stewed apples increase the production of short chain fatty acids which helps to activate the immune system.

  1. Leave aside 1 chopped apple to garnish. Place remaining chopped apples in a saucepan and cover with water. Bring to the boil and simmer until soft - about 10-15 mins. Drain the cooked apples and place in a blender. Blend until smooth.
  2. In the meantime, place oats, milk, chia, maple syrup, and cinnamon in a saucepan. Bring to the boil and simmer for 10 mins. Turn off heat and stir in the flaxseed and raisins.
  3. Pour the porridge into bowls and top with the applesauce, chopped apple, extra raisins and flaked almonds. Serve.

  1. Add all ingredients into a bowl and place in fridge overnight

Raspberry Jam
  1. Add raspberries to pan and cook on a low heat for 10 minutes. Break them up with a fork while they are cooking

  2. Take off heat and add rest of ingredients

  3. Let stand until cool

Cream cheese topping
  1. Add all ingredients to a high speed blender and blend until smooth.

To assemble
  1. Place overnight oats at the bottom of a glass jar or glass container

  2. Put layer of Raspberry jam on top of oats

  3. Put cream cheese on top of jam

  4. Finish by adding on top some coconut yogurt, some grated lemon peel and fresh raspberries.
