Instructions
  1. Heat the oven to 180C. Cut the tofu into long rectangles. Place the pieces of tofu in a bowl and sift over the cornflour and then season. Shake the pieces so that they get evenly coated.
  2. Oil an oven proof dish and then add the slices of tofu. Pour the olive oil evenly over the tofu and then sprinkle over the sesame seeds. Place in the oven for 30-40 minutes - turn half way through.
  3. Mix the sauce, adding all the ingredients together
  4. Remove the tofu from the oven and pour over half of the sauce and leave to stand.
  5. Heat the sesame oil in a wok and add the vegetables and stir fry for 3-5 minutes. Add the cooked noodles - then add the sauce and thoroughly stir. Season to taste with extra tamari if required.
  6. Finally add the crispy tofu pieces and cook until heated through.
  7. To serve, sprinkle with chilli flakes, sesame seeds, chopped spring onions and chopped coriander.

These are great for lunch - filled with fresh raw vegetables, coriander and crispy tofu. The sauce is full of flavour and great for dipping.

Instructions
  1. Toss the tofu in the cornflour and then fry in the sesame oil. Stir to ensure that all sides are browned.
  2. Prepare the sauce by adding all the ingredients together and stirring to combine. Add water as necessary to make the sauce pourable.
  3. Then add 2 tablespoons of the sauce to the tofu and then the tamari sauce, and maple syrup - stir well.
  4. Add tofu back to the pan and cook for several minutes until glazed. Set aside.
  5. To assemble spring rolls, pour warm water into a shallow dish and immerse each rice paper for about 10-15 seconds.
  6. Then spread each rice paper out on a board. Add a small amount of vermicelli noodles and layer each vegetable (cucumber, red pepper and carrot) on top together with some coriander and 2-3 pieces of tofu on top.
  7. Gently fold over and tuck in the edges and continue rolling until sealed.
  8. Repeat with the remaining rice paper, vegetables and tofu until all of rice paper and veg has been used.
  9. Serve with the remaining peanut dipping sauce.

Tofu Satay with Pineapple Salsa

Tofu Satay with Pineapple Salsa
The satay sauce and pineapple salsa really compliment each other in this dish - its delicious! Served here with some brown rice.

  1. Slice the tofu into 8 equal sized slices. In a bowl , mix the ground spices, garlic, tamari and oil together. Add the tofu and allow to marinate for 30 minutes. Then place the tofu on a greased baking sheet and bake for 20 minutes, turning once halfway through.
Satay Sauce
  1. Heat oil in a large pan and add the onions, garlic, chilli and ginger. Fry for about 5 mins. Then add the ground spices and cook for a further minute.
  2. Then add the coconut milk, tamari, xylitol, lemongrass, and simmer for 20 minutes until reduced by half. Stir in the peanut butter and continue to simmer for another 10 minutes.
  3. Remove the lemongrass from the sauce and place in a blender. Blend until smooth.
Salsa
  1. In a bowl mix all the salsa ingredients together.
  2. Serve the baked tofu on some brown rice, with the satay sauce and pineapple salsa.

Tofu Laska Curry with Rice Noodles

Tofu Laska Curry with Rice Noodles
Laska curry is a Malaysian dish. Made with tofu and vegetables including broccoli, red and yellow peppers, courgettes and mushrooms. Rice noodles are also added to make a complete meal and it is also gluten free.
Instructions
  1. Place tofu into a baking dish and pour over 1 tbsp. of olive oil and 1 tbsp of tamari. Bake for 20- 25 mins and then remove from oven and set aside. Put oil into a large wok and add spring onions, mushrooms, peppers, chilli, courgette, and broccoli and cook for 5 mins.
  2. Add the curry paste, stir and cook for a further 2 mins.
  3. Pour vegetable stock into the wok together with the coconut milk and bring to the boil. simmer and add the tamari.
  4. Add the noodles and cook for a further 5-10 mins until soft. Add the baked tofu.
  5. Add the lime juice and scatter over the coriander. Serve.

This is a fragrant and light dish for dinner. Here I have made my own green curry paste but if you do not have time then use a shop bought paste. Served here with brown rice.

  1. Place all the ingredients into a food processor or blender and process until smooth - add some olive oil as necessary. Set aside

  1. Cut the tofu into small cubes. Place in bowl and add oil and tamari and mix until covered.
  2. Grease and oven proof dish and place tofu into it. Cook in oven for 20-30 mins at 180C. Remove and set aside.
Curry
  1. Heat a large wok or frying pan and add oil. Add onion, garlic and ginger. Cook for 5-7 minutes.
  2. Add curry paste and chillie and continue stirring. Then add coconut milk, vegetable stock, xylitol an vegetables. Cook for about 10- 15 mins or until vegetables are cooked.
  3. Add tamari sauce and tofu. Then stir the fresh coriander into the curry. Serve with lime to garnish and extra coriander.
