This is a raw, vegan, gluten free cheesecake which is really delicious.

  1. In a food processor combine the nuts and cocoa powder and process until it resembles fine breadcrumbs. Add the dates and coconut oil and process until the mixture begins to bind together.
  2. Pour the mixture into an 8 inch spring form cake tin and press down until flat. Place in the fridge to set.
Filling
  1. Place all the ingredients into a high speed blender and blend until smooth - add extra coconut milk as necessary.
  2. Pour onto the base. Place in fridge for 3 hours to set.
  3. When set, remove from tin and decorate with some grated vegan chocolate and berries.

This is another variation of the overnight oat recipes - its full of protein and good fats.

  1. Place into a blender the banana, carrot, dates, almond butter, flaxseed, cinnamon, vanilla essence and milk. Blend and pour into a bowl

  2. Add oats and chia into bowl and leave overnight

  3. Place the overnight oats into 2 glass jars.

  4. Add a layer of fresh blueberries followed by a layer of coconut yoghurt. Top with granola or another layer of fruit of your choice.

Instructions
  1. Soak the dates overnight so they are soft. Make sure you take the stones out.
  2. Add the dates and the remaining cake ingredients to a food processor and mix until smooth.
  3. Add to a baking tin and cook on 180C for 45minutes until golden brown
Chocolate Ganache
  1. Melt the chocolate
  2. Add the remaining ingredients together and add the chocolate
  3. Mix until smooth
Assembling
  1. Allow the cake to cool down (1 hour) add the ganache to the top of the cake and serve with fresh berries
