Spicy Lentil and Vegetable Soup
This is a thick and chunky soup that's great for a filling winter's lunch. Lentils are a really good source of both protein and fibre.
Instructions
  1. Heat the oil in a large pan and add the cumin seeds, garlic, onion, celery and carrot - saute for about 10-15 mins until soft.
  2. Stir in ginger, ground cumin and cinnamon stick and saute for 1 minute. Then add the vegetable stock and tomato puree. Stir in the lentil, season and bring to the boil.
  3. Then simmer covered for 30 minutes.
  4. Remove pan from the heat and stir in the spinach leaves and allow them to wilt. Serve topped with fresh chopped coriander.

  2. Cook until the mixture is reduced to a thick consistency.
  3. Remove from the heat. Then remove the cinnamon stick and cloves. Serve with coconut yoghurt.

  1. Put all of the compote ingredients into a saucepan, bring to the boil and then simmer, stirring occasionally. Cook until the mixture is reduced to a thick consistency.
  2. Remove from the heat and remove the cinnamon stick and cloves.
Porridge
  1. Place all ingredients, other than the flaxseed into a saucepan and bring to the boil. Simmer. Cook, stirring occassionally for 5-10 minutes - add more milk if too thick.
  2. When the porridge is cooked remove from heat andf stir in the ground flaxseed. Divide into bowls and serve with the spicy prune compote.
  3. Garnish with coconut flakes or flaked almonds.
