Spicy Miso Soup with Tofu
Miso soup is delicious and healthy and this version is really spicy - with the seared tofu it makes a great lunch. Miso is a protein-rich fermented soybean paste. It is rich in essential minerals and a good source of various B vitamins, vitamin E, K and folic acid. As a fermented food, miso provides the gut with beneficial bacteria that help us to stay healthy.

Instructions
Paste
  1. Place all the paste ingredients into a food processor and blend. Set aside.
Tofu
  1. Press out as much moisture as possible. Cut into cubes. In a large pot, heat the oil and start frying the tofu until it has browned. Add 1/4 of the paste, stir and cook for a further 2 minutes. Remove from the pan and set aside.
Soup
  1. To the same pan add the shitake mushrooms and a tablespoon of the paste and stir fry until golden brown.
  2. Add the stock and milk and bring to the boil - reduce the heat and simmer. Put the remaining paste into the saucepan and stir to thoroughly combined.
  3. Place cooked noodles into the soup together with the cooked tofu, stir and cook for a further 2 minutes.
  4. Serve, garnished with chopped coriander.

Thai Red Curry with Tofu

Thai Red Curry with Tofu
This is a quick, easy and tasty curry - it can be served with some steamed vegetables or some brown rice.
Instructions
  1. Place the tofu into an oven proof dish and pour over 1 tbsp. olive oil. Place in oven for 25 mins on 180C. Remove from oven and set aside.
  2. In a large wok heat the oil and add the ginger, onion, garlic, and chilli and sauté for 5 mins.
  3. Add mushrooms and red pepper and sauté for another 5 minutes. Season.
  4. Stir in curry paste and cook for 2 mins. Pour in coconut milk, tamari, lime zest and juice. Add tofu pieces and simmer for 10 mins, stirring frequently.
  5. Serve and garnish with fresh chopped coriander,

Tofu with Chilli Ginger Sauce

Tofu with Chilli Ginger Sauce
This is sweet, spicy and sticky and has a great flavour. It is quick and easy to make and goes well with brown rice, and steamed vegetables like bok choy and broccoli.

  1. Press the tofu on a clean tea towel to dry it as much as possible. Then cut it up into cubes.
  2. Mix the Chinese five spice and flour together in a bowl and then place the tofu into the bowl and toss so that it is covered in the dry mixture.
  3. Heat the oil in a frying pan and add the tofu. Cook on each side until crispy. this will take about 10 minutes. Season. Remove from the heat and set aside.
sauce
  1. Add the arrowroot to a pan and then stir in the vinegar to ensure that no lumps form. Add the rest of the sauce ingredients and blend well.
  2. Place over a medium heat and keep stirring until it becomes thick. Add more arrowroot if not thick enough (just mix up a teaspoon of arrowroot with some water and pour into the mix)Season. Remove from the heat.
  3. Place the tofu on a serving plate and drizzle over the sauce. Sprinkle over some sesame seeds. Leave the sauce on the side and let everyone drizzle extra sauce as required.
