Salmon with Butterbean Leek Mash and Roasted Vegetables

Butterbean Leek Mash

Ingredients

  • Butterbeans x 2 tins
  • Large Leek x 1
  • Garlic cloves x 3
  • Onion x 1
  • Olive Oil
  • Vegan Milk 1 tbsp
  • Sea Salt and Black Pepper to season

Instructions

  1. Finely chop the leek, onion and garlic and place into frying pan with olive oil – lightly fry
  2. Place butterbeans into food processor and add fried ingredients
  3. Add milk
  4. Blend until a smooth mash
  5. Add sea salt and black pepper before serving
